Clubhouse Eats: The guacamole at the Fairmont Scottsdale Princess is simply divine

This week, the PGA Tour continues its West Coast swing with a stop in Scottsdale, Ariz., where an impressive field (Jon Rahm! JT! Xander! Bryson! Rickie!) is preparing to take on TPC Scottsdale’s Stadium course — and its famously raucous par-3 16th hole — for the Waste Management Phoenix Open.

In addition to 36 holes of fantastic golf (the Stadium course, home of the tournament, and the Champions course, which is across the street), TPC Scottsdale is also right next door to the luxe Fairmont Scottsdale Princess, a sprawling resort that boasts 750 guest rooms situated among lushly landscaped grounds. There are also four exceptional restaurants on property, one of which is acclaimed Mexican eatery La Hacienda, where you can dine both outdoors and in, and enjoy a menu of tacos, enchiladas, and chef’s specialties like the Carnitas Hacienda, Tampiquena, and Filet a La Parilla.

But regardless of what you decide to order as an entree, you must indulge in one particular accompaniment: La Hacienda’s out-of-this-world guacamole.

While guacamole is a staple at just about every Mexican restaurant, La Hacienda turns it up a notch with made-to-order preparation. The “Traditional” includes avocado, tomato, onion, chile serrano and cilantro,  while three other varieties supply a burst of unexpected flavor. There’s Sandia, which includes queso fresco, spiked agave nectar and candied pepitas; Tres Cerditos, featuring bacon, carnitas and chicharron; and Esquites, which includes sweet corn, cultured cream, tajin, cotija and lime.

Can’t decide which one to order? That’s a common predicament, and La Hacienda’s solution is the sampler, which includes a small portion of the three non-traditional options.

Pair your guac with an ice-cold cerveza or signature margarita for a combo that’s muy bueno — just don’t blame me if you end up being too full to enjoy the rest of your meal.
